Every year Meat Markets from across Texas come together at the Texas Association of Meat Processors (TAMP) Convention to learn about education, manufacturing techniques, and current laws and regulations, concerning meats. This year’s convention was held in Corpus Christi, Texas from August 4 – 6th. TAMP also puts on a cured meats product show where members compete in 15 product categories. All entries are judged on the basis of aroma, flavor, eye appeal, color and texture with the judges being students and staff from Texas A&M University as well as local restaurant and food service professionals.
At the 2016 TAMP convention Stanton Meats won the prestigious “Best of Show” and “Top Overall Exhibitor” Awards. Stanton’s “Best of Show” entry was with its Jalapeno Cheese Smoke Link Sausage which earlier in the day had won Champion Specialty Smoked Sausage. Allen Stanton of Stanton Meats said, “The Level of competition here is incredible. When they announced our Jalapeno Cheese Smoked Sausage had won “Best of Show” I was stunned because that was the goal we set for our sausages years ago to be the best and we have now achieved it. Our Jalapeno Cheese smoked sausage is one of our top sellers. I would describe it as a Cadillac of smoke sausages because of its richness and full flavor. It’s got so much heat but its not over-powering. We especially sell a lot of this flavor to our wild game and deer hunters with some of them driving out of their way 100 miles or more to have this product made with their game meat.”
Stanton’s also won the prestigious “Top Overall Exhibitor” award given to the meat market with the highest overall placing in all 15 cured meat categories. Allen continued, “We had a great day, we not only had champion specialty smoke sausage with our jalapeno cheese smoke sausage we had Champion Snack Stick with our 7 Pepper beef stick and Champion Hot Link Sausage. We also won Reserve Champion in two categories: Fresh Pork Sausage with one of our top sellers Maple Blueberry Breakfast sausage and Reserve Champion Specialty Snack Stick with our new Pineapple Flavor beef sticks.” Allen concluded, “Again, we had a tremendous day at the convention giving real testimony to the quality of products we produce here at the store. Everyone claims to make the best, well we just proved it. I would like to thank our meat market personnel especially market manager Jody Kimbrough and Eric Cruz for all their hard work in putting these products together for our store.”
